The Fantasyland Expansion has had the Disney community buzzing for years. We've peeked over walls, took photos from Dumbo and stalked internet sites like maniacs to get information about the expansion and opening dates. Now that we've flown on the new Dumbo and experienced a bit of the Big Top we're ready for the next big thing.
Be Our Guest restaurant has been anxiously anticipated since it was announced and we're all chomping at the bit to dine in Beasts castle. Rumor has it that advanced dining reservations will open in August for the restaurant, which will open "late 2012" "holiday season" (no specific date released yet).
Inside Beasts Castle will be three dining rooms (accommodating a total of 550 guests): The Library/Gallery, the West Wing and the two-story Ballroom. Counter service by day and table service by night this French restaurant is offering quality and French flair in both menus.
Let's "unfold the menu..."
Lunch
- Tuna Niçoise salad
- Croque Monsieur sandwich with carved ham, Gruyere cheese, béchamel and pommes frites (French fries)
- Carved turkey on a warm baguette with Dijon mayonnaise
- Grilled steak sandwich with garlic butter spread
- Braised pork
- Vegetable quiche
- Quinoa, shallot and chive salad
Dinner Appetizers:
- Charcuterie plate with cured meats and sausages, mussels steamed in white wine
- French onion soup
- Potato leek soup
- Salad with champagne vinaigrette
- Salad trio with three mini tastes of roasted beef, raisins and orange; green beans, tomatoes and roasted shallots; and watermelon, radish and mint
Dinner Entrees:
- Thyme-scented port rack chop with au gratin pasta
- Rotisserie rock hen with roasted fingerling potatoes
- Pan-seared salmon in leek fondue
- Grilled strip steak with pommel frites
- Sautreed shrimp and scallops with veggies in puff pastry with creamy lobster sauce
- Oven-baked ratatouille
Dessert:
- Cupcakes-Strawberry cream cheese or triple chocolate
- Chocolate creme puff and a Passion fruit cream puff

Disney Parks Blog has released a few photos of what we can look forward to inside Beasts Castle. Judging by the detailing and Imagineering we've seen in New Fantasyland via Dumbo I can only imagine what Beasts Castle is going to offer.
